Courtesy of my friend Kurt:

  • 4 ripe avocados, mashed
  • ½ large red onion, diced
  • juice of two limes
  • garlic salt to taste

This is just about the only guac that I like; usually, I find guac just kind of slimy and tasteless. (Of course, that’s my opinion of avocados, as well, so we can see where it comes from.)

I could go for Mexican food too.. hmmmmmmm - but I need to find a new source since our old favorite place has made me sick the last two times I've been there!

Perfect Guac...

There are two variants of Guacamole that I really like. One is to add chopped fresh tomatos and cilantro. The other is to add curry powder. The former is from La Luz in Fort Collins, I love their guac. The other is from Coopersmith's, also in Fort Collins, and works really well, particularly if you like curry.
